			<content:encoded><![CDATA[<p>I was so confused about what should I serve to my office colleagues for the evening snacks, when I suddenly remembered about this yummy delight that my mom used to cook(I simply loved it as a child). She used to make it every year before Christmas and store in containers (though me and Jack- my brother- made it sure that they never existed till Christmas!). So I just made her a call and she told me how to make it and then I just started. I was a little afraid whether I would be able to recreate the taste she had in her <strong>cookies</strong>. But when I tasted them the very next day, I simply could not believe it that I have made them. They were so easy to make and tasted awesome. My colleagues were all praises for me. They simply loved it. I was really happy to see this and so decided to share the great recipe with you. After all you deserve to pamper yourself with these yummy delights!</p>

<p><strong>Fruit Cake Cookies:</strong></p>
<p><strong>Ingredients-</strong></p>
<p>4 eggs</p>
<p>3 ½ cup all purpose flour</p>
<p>1 cup butter</p>
<p>2 cups packed light brown sugar</p>
<p>2 tablespoons milk</p>
<p>1 pound pecan halves</p>
<p>1 pound raisins</p>
<p>1 pound golden raisins</p>
<p>1/2 pound green candied pineapple</p>
<p>1/2 pound red candied cherries</p>
<p>1/2 pound green candied cherries</p>
<p>1/2 pound red candied pineapple</p>
<p>2 tablespoons milk</p>
<p>1 cup bourbon</p>
<p>1 teaspoon ground cinnamon</p>
<p>1 pound walnut halves</p>
<p>1 teaspoon ground nutmeg</p>
<p><strong>Preparation-</strong></p>
<p>1)    Take a medium sized bowl. Now take about 1 cup flour and dredge candied <strong>raisins and fruits</strong> in it.</p>
<p>2)    Take a large bowl and cream together some butter and brown sugar. Now, beat the eggs with this mixture. Gradually beat it in bourbon and then some milk.  Once you are done, mix in the remaining spices and flour. Add the fruits and nuts and stir properly. Now refrigerate the mixture overnight.</p>
<p>&nbsp;</p>
<p>3)    Preheat the oven to about 175 degree C (that is 350 degree F) and drop the dough on ungreased cookie sheets. Separate it using teaspoons (make them about 2 inches apart).</p>
<p>4)    Bake it for about 15 minutes. Now you can take it out from the oven and let it cool on the wire racks.</p>

All this is enough to make your mouth watery. It is an easy recipe and eaten on special occasions like Christmas. With little knowledge in cooking, you too can prepare some juicy, succulent and tender pork. Just learn the art of roasting pork and know what you need.<br />

<p>Some love it with crackling so go for a portion that has enough fat and rind. The parts that are suitable for roasting include rolled loin, shoulder, leg and rack. If you do like crackling then go for rindless portion which can be pork scotch fillet. Remember the cuts have less fat so they are much healthy to eat.<br />
It is important to store it in the coldest portion of the refrigerator if you are not planning to cook it for 2 days. Place it in sealable bag or in an airtight container. Place the pork for 24 to 48 hours to thaw it well. Now preheat the oven to 200 degree Celsius to make the rind crisp. Then you can reduce the temperature to cook the meat properly.<br />
To make the pork juicy, cook it in medium flame.  Cover the meat with a foil and allow it to settle down for about 10 minutes before carving it. This helps to make the meat tender and juicy.<br />
<strong> Instructions for crisp cracking</strong></p>
<p>You need to brush the rind with oil and sprinkle salt on it. Then roast the pork. When it is cooked well remove the rind and leave the meat to rest for a while. Now it is time to place the rind on pre-heated grill until the crackling puffs and becomes crispy.<br />
Marinated pork loin recipe with currant jelly sauce makes an excellent festive treat.</p>
